Originating from the Middle East and cultivated in Europe since pre-historic times. Richer than onions in vitamin C, sulphur, potassium and calcium. A cool-season kitchen essential, Leek delivers a mild, sweet, sub-onion flavuor that elevates soups, stews, quiches, and roasts. Formed by thick, tightly wrapped leaf sheaths, leeks produce long, succulent white stems topped with fan-like, deep blue-green foliage. Exceptionally hardy and easy to care for, they can remain in the ground over a long period, allowing you to harvest fresh stalks whenever needed.
Planting Instructions
- Position: Choose a full-sun location in fertile, loose, well-draining soil heavily amended with compost or well-aged organic matter.
- Transplanting & Dibber Method: For long, blanched white stems, use a dibber or wooden stick to create a narrow hole about 10–15 cm deep. Separate seedlings gently and plant straight into the hole and cover—simply water gently into the hole to settle the roots. The soil will naturally fill in around the stem as it grows.
- Depth & Spacing: Space individual seedlings 15 cm apart in rows 30 cm apart.
- Blanching (Optional): As the plant grows taller, gently mound soil around the base of the lower stem every few weeks to block sunlight and expand the long, tender white stem section.
- Watering: Water regularly to keep the soil consistently moist, especially during warmer spells. Mulch well to retain moisture and keep weeds at bay.
- Harvest: Begin harvesting when stems reach thumb thickness or larger (around 12–16 weeks after transplanting). Lift carefully with a garden fork to avoid damaging the base.
